Sun Dried Tomato Pesto
  • 2 C. High-Quality Sun-Dried Tomatoes
  • 2 tsp. Chopped Garlic
  • 3 Tbsp. Toasted Walnuts
  • ½ C. Extra Virgin Oil
  • ½ C. Fresh Parmigiano-Reggiano Cheese (or Pecorino Romano)

Method of Preparation:

  1. Soak sun-dried tomatoes in warm water for one hour.
  2. Place all ingredients in the bowl of a food processor and run until smooth.
