Sun-Dried Tomato Pesto

Ingredients:
- 2 C. High-Quality Sun-Dried Tomatoes
- 2 tsp. Chopped Garlic
- 3 Tbsp. Toasted Walnuts
- ½ C. Extra Virgin Oil
- ½ C. Fresh Parmigiano-Reggiano Cheese (or Pecorino Romano)
Method
of Preparation:
- Soak sun-dried tomatoes in warm water for one hour.
- Place all ingredients
in the bowl of a food processor and run until smooth.
