Greek Salad

Ingredients:

Greek Salad
  • 4 Large Tomatoes, chopped
  • 1 Green Bell Pepper, chopped
  • 1 Cucumber, peeled and chopped
  • 1 Red Onion, chopped
  • 6 oz. Crumbled Feta Cheese
  • ¼ C. Olive Oil
  • ? C. Lemon Juice
  • 2 tsp. Sugar
  • 1 ½ Tbsp. Dried Oregano
  • 1 Can Cooked Sliced Beets
  • 1 Head Romaine Lettuce

Method of Preparation:

  1. Tear lettuce into bite-sized pieces and wash well. 
  2. In a large bowl, combine tomatoes, green bell pepper, cucumber, beets, red onion, olive oil, sugar, oregano and lemon juice. 
  3. Refrigerate until thoroughly chilled.
  4. Place on romaine; sprinkle with feta cheese before serving.

Yield:

6-8 servings
