Former ACA Student to Compete in Great American Seafood Cook-off

Chef Peter Fischbach, a former Academy of Culinary Arts student, will once again represent New Jersey the Great American Seafood Cook-off Saturday, Aug. 7, at the Louisiana Foodservice Expo in New Orleans.
Fischbach, of Toms River, attended the Academy at Atlantic Cape Community College from 1996-97, and is executive chef and food service director for Gourmet Dining Services at the New Jersey Institute of Technology in Newark. This is the third year in a row he is participating in the cook-off. In 2009, Fischbach came in second place for his Barnegat Light Scallops recipe. This year, he will prepare a Jersey scallop, lobster and black bass dish accompanied by Jersey Fresh vegetables.
The competition—now in its seventh year—will feature accomplished and up-and-coming chefs from across the country who will prepare unique dishes using domestic seafood, and utilize fish that is native to their home state.
The chief sponsor of the event is the National Marine Fisheries Service, which uses the cook-off to emphasize the importance of consuming domestic seafood from sustainable fisheries. Emmy-winning conservationist Jeff Corwin, host of Animal Planet’s Jeff Corwin Experience and Food Network’s Extreme Cuisine will co-host the cook-off with Chef John Folse, recognized as Louisiana’s Culinary Ambassador to the World.
