July 22, 2009
Chef Peter Fischbach, a former Academy of Culinary Arts student, won second place when he represented New Jersey at the Great American Seafood Cook-Off July 18, at the Louisiana Foodservice Expo in New Orleans.
Fischbach, of Toms River, attended the Academy at Atlantic Cape Community College from 1996-97, and is executive chef and food service director for Gourmet Dining Services at the New Jersey Institute of Technology in Newark. This is the second year in a row he participated in the cook-off. Fischbach prepared his Barnegat Light Scallops recipe.
The competition-now in its sixth year-featured 15 established and up-and-coming chefs from across the United States preparing original dishes containing seafood indigenous to their areas of the country.
The chief sponsor of the event is the National Marine Fisheries Service, which uses the cook-off to emphasize the importance of consuming domestic seafood from sustainable fisheries.
