Former ACA Student to Compete in Great American Seafood Cook-Off

Chef Peter Fischbach, a former Academy of Culinary Arts student, will once again represent New Jersey at the Great American Seafood Cook-Off July 18, at the Louisiana Foodservice Expo in New Orleans.

Fischbach, of Toms River, attended the Academy at Atlantic Cape Community College from 1996-97, and is executive chef and food service director for Gourmet Dining Services at the New Jersey Institute of Technology in Newark. This is the second year in a row he is participating in the cook-off. Fischbach will prepare his Barnegat Light Scallops recipe.

The competition-now in its sixth year-will feature 12 established and up-and-coming chefs from across the country preparing original seafood dishes.

The chief sponsor of the event is the National Marine Fisheries Service, which uses the cook-off to emphasize the importance of consuming domestic seafood from sustainable fisheries. The host is Sig Hansen, a commercial fisherman who stars in the popular Discovery Channel documentary series, "Deadliest Catch."
