ACA Announces Anniversary Dinners Featuring Alumni Chefs

In honor of its 25th anniversary, the Academy of Culinary Arts will host several special dinners this fall at Careme’s, the on-campus, student-run gourmet restaurant.

The first dinner will feature alumni Chef James Hennessey, ’00 ACA, on Monday, Oct. 9. Hennessey is executive chef of Specchio, Ombra and Risi Bisi at the Borgata Hotel Casino & Spa. He will prepare a special five-course meal featuring specialties from his restaurants. Cost is $25 and seatings begin at 6:30 p.m.

The menu includes: Fresh Black Mission Figs Stuffed with Gorgonzola and Speck (smoked and cured ham); Butternut Squash Risotto with Sage, Pecans and Brown Butter; Seared Scallops with Blood Orange Beurre Fusso and Fennel and Blood Orange Salad; Berkshire Pork Chops with Sweet Potato Polenta, Brussel Sprouts and a Southern Comfort Glaze with Plums; and Poached Pear with Mascarpone and Walnuts.

Future Alumni Chef Dinners are scheduled for Oct. 30, Nov. 6 and Dec. 11.
